Rolled Stuffed Fillets

1/4 cup chopped onions
1/4 cup margarine
4 cups soft bread crumbs
3/4 cup salt
Dash of pepper
1 tsp. poultry seasoning
1 cup mayonnaise
1 lb. white fish fillets (any white fish is great)

Cook onion in margarine till tender - not brown
Stir in crumbs and seasonings
Blend in 1/2 cup mayonnaise
Cut fillets into 5 strips and flatten somewhat
Spread with stuffing
Roll as you would a jelly roll...secure with a toothpick*
Place in greased casserole dish
Bake at 350 degrees for 20 minutes
Spread fish with remaining mayonnaise
Return to oven for an additional 20 minutes.

*Recipe is from a good friend, Laurie Smith. Laurie lives in Livingston and works with me at the hospital. In cooking this dish one time, she accidentally used a mint flavored toothpick. Not a good idea as the mint flavor permeated the entire dish and does not blend well with fish and mayo!
